I was thinking about Tajines the other day and got hungry for the flavours of Moroccan food. I didn't buy a tajine yet, but used a dutchoven and made a pretty decent stew. I started with a Moroccan Beef Stew Recipe and did a little tinkering.
First, instead of 1 can of tomatoes, I did a 14 oz can of crushed tomatoes and a 14 oz can of chopped tomatoes. I added ½ a cup of pumpkin seeds and ½ cup of slivered almonds. Because little ones were going to eat the stew, I omitted the cinnamon sticks but did add an additional ½ tsp of cinnamon/cassia. Finally just to increase the depth of flavour and colour a couple of tbsp of tomato paste and ½ tsp of smoked paprika.
I am going to buy myself a tajine and do some other wonderful dishes, but this was a nice interim flavour fix.
