I love summer, we are now starting to see good fresh produce, and the street markets are open so you can even get some of the local gems. I recently scored some heirloom cherry tomatoes (silly me didn't take a snap... sorry :( ). I headed to Spinnelli's (AKA the Italian Centre) and scored a fresh large boccaccini, some fresh basil and made me one yummy salad.
- 1 basket of heirloom cherry tomatoes (250 g)
- 1 large boccaccini (250 g)
- 6 basil leaves
- your best EVO
- good balsamic vinegar
- sea salt and pepper to taste
- a good baguette
Quarter the tomatoes and give them a good dash of salt and pepper. Slice the boccaccini into 1/2 cm thick slices and season with S&P. Chiffonade the basil, and toss everything in a bowl. Add a tablespoon of your best extra virgin olive oil, and a drizzle of good balsamic, give everything a good toss. Taste and adjust seasoning for your preferences.
I lay the slices of boccaccini on the plate, put a nice heap of the tomatoes on each slice. Pour some of the residual juices on top of each pile, so you can mop them up with a piece of baguette. A glass of a light fruity red, and life is good. (I will make this again and snap a pic.)
